Prepare yourselves for yumminess. Today I’m going to share with you a great way to use one of my favorite local natural resources – Rainbow Trout. Of course, there are as many ways to prepare trout as there are cooks: broiled, grilled, steamed, pan-fried, stuffed, etc. I will happily eat each and every one of those, but smoked trout is especially dear to me. I’m a sucker for just about any kind of smoked fish, but the thing I like so much about smoked trout is its perfect balance of salty and sweet flavors. This morning I made this delicious spread for topping our amazing Udi’s gluten free bagels. It was truly a perfect breakfast, but would be equally good as a light lunch or an appetizer. Smoked Trout Spread
What You Will Need:
- 1 package (8 oz) plain cream cheese (brick is fine, but whipped makes mixing everything up easier)
- 8 oz smoked trout
- 2 tablespoons finely chopped white onion or green onion (scallions)
- 1 tablespoon chopped green herbs (parsley, cilantro, chives, etc. – whatever you like)
- 1/8 teaspoon garlic powder
- 1/4 teaspoon black pepper
Put It All Together:
If you are using white/yellow onion, soak the onions in cool water for 5 minutes to remove the harsh flavors.
After 5 minutes, drain the onions and add them to a small mixing bowl.
Add the green herbs, black pepper and garlic powder to the onions.
Peel the skin off the trout, if it’s not already skin-free.
Break the trout into small pieces and add to the bowl.
Cut the cream cheese into pieces (if using a brick of cream cheese) and add to the bowl .
Mix and mash everything together with a fork!
Spread on bagels, toast, crackers or veggies and enjoy! You can substitute any other smoked fish- salmon, whitefish, etc. Play around with the fish and the herbs and see what new variations you come up with.
